I built this smoke house in about 4 days useing mostly recycled materails that i had scrounged up over the last year.

I picked up this hot plate at canadian tire for $20. it works great.

I used 2 smoke stacks because when your smoking lots of fish at once you need to get rid of the humidity in the smoker. these modified exaust pipes work great as smoke stacks i put end caps on them so i can regulate the air flow in the smoker. works great and looks sharp.

When the smoke clears its time to eat yummy smoked sockeye.

HOW DOES A SMOKER WORK? YOU JUST FILL A BOX WITH SMOKE AND IT COOKS THE FISH? HOW LONG DOES THAT TAKE? HOW LONG WILL THE FISH STAY GOOD FOR WHEN IT IS DONE?

UNTIL LAST YEAR I DIDNT THINKI LIKED SMOKED SALMON. THE FIRST TIME I TRIED IT I WAS LIKE 7 AND DIDNT LIKE IT. THEN, I WAS BEING POLITE AND TRIED SOME AND REALISED HOW GOOD IT WAS. NOW I'M NOT REALLY SURE HOW IT ALL WORKS

smoking is a type of cureing. first you need to brine your salmon a basic brine consist of one part course salt to two parts brown sugar. this brine is the first step in cureing your catch. the next step is to cure your fish useing smoke your also removeing the moister out of the fish at the same time, so you need air flow in your smoker. i smoked these fish for about 30hrs and would add more wood chips to the pan about every 4-6hrs. i used a mix of cherry and maple chips that i had soked in water first.

SO YOU JUST POUR A SUGAR/SALT MIX ON IT FIRST AD LET IT SIT AROUND FOR A BIT? THEN WHAT, IT'LL HAVE A CRUSTY SLUDGE ON IT AND THEN YOU PUT IT IN THE SMOKER AND ITS DONE?

no you wash the "crusty sludge" off with water and then dry the fish with paper towl before you stick it in the smoker....

it gets about 75-80 degrees in there.
it does look like a shitter my mother in law wants me to put one of those little half moons that you allways see on out houses over the door. lol

Nice work Abe! The neighbours must love you or do you pay them off with a fish?

Do you place a tray on top of the burner?

Is the burner adjustable or is it low, med, high?

this is the burner i picked up at canadian tire for $20
i put a small cast iron frying pan on it with a good handfull of chips. i left the dial at 3 and that would make good smoke for about 3-4hrs
