Hello fellow anglers, i gutted salmon yesterday and the meat was light pink. I have gutted a bunch of salmon this pink season, so i think i got a rough idea what the meat should look like. Well, it was sorta like light, light pink, which i thought weird. when i had descalled it, not too much scales coming off, some sea lice. The lack of scales also made me think this is NOT normal
when i finish, i cut it all up in chucks. i happen to have a piece of uncooked sockeye salmon from the
day before. wifey reminded me to throw it in with da fish stew. i took pics so i can show on here. very reddish meat compared to the fish i recently caught.
after cooking, the fish meat turned white. the sockeye chuck is still reddish, albeit because of the cooking, the sockeye was less reddish.
is this normal?
this happened to me last year. my friend gave me salmon from cap river dam. meat turned white after cooking.

Just was worried cause i got a little baby and we try to give him fish protein when possible
