Limmited out on crab and brought home some nice flatfish layed dew worm on the bottom lots of funon light gear. Was wondering how to fillet the bigger ones, or is it that much easier to poach or bake them whole ?

Was wondering the same thing, I found them kind of hard to fillet.

YouTube? When I caught my first batch of perch, that was where I went to figure out how to fillet them properly. 3 different techniques were shown, all of them with merits. Give it a search. But I bet the most important thing is a really good knife, the rest is experience surely.
