I bought a dozen sockeye which i smoked up most of them, dry brine about 50/50 salt and brown sugar for 3 hours or so then dried out for 12 then smoked for about 4-5 hours, i cut all my pieces into 4" by about 1.5" strips, turned out fantastic best smoked salmon I ever had, not salty, flavorful and super moist.

I kept 3 chums from this season, however I pre soaked them in Cpt. Morgan's dark rum for about 4 hours, then in a 1/3 salt to 2/3 brown sugar brine for about 10 hours, air dried for 6 hours then smoked for 5. Turned out alright....not as good as the sockeye but i gave some to the guys at work and they loved it! I think i dont like it as much cause im not a huge fan of rum and you can defiantly taste the rum thats for sure.

Finally, made some Indian candy out of sockeye and a white spring jack, turned out awesome but a lot of work, I found that the white spring turned out better than the sockeye so now I will turn all my white springs (should i keep) into candy. Brown sugar maple syrup honey - brine for 14 hours, then fan dried for 24 hours, smoked for 4-5 hours. (cut into 1/4" x 1/2" x 4" strips)

I did a bunch of sockeye and spring this year. Candied,x2 smoke and Lox...Deep freeze is full and lock up too two fourteen and a seventeen Y/O it'd be gone in a week.

Thinkin of takin the two younger ones out Thursday any one fish local this time of year? Was thinking jones . oh I'm in Maple Ridge.

I do have a boat but was looking for a bit more of a remote local. Was orginally thinking the Princeton area but couldn't get Friday off work
I've got 4x4 as well so Jones may be the ticket.

Also, when you candy your salmon do you still need a smoker? or is there an easy way to preserve/candy it without smoking it? appreciate any tips

Thumbs up to you ChakaRaka, funny that bently doesn't make posts like his here on other forums but then they are moderated.
As far as a brine recipe, I have just coated my fillets with demarara brown sugar and a bit of salt, let it sit overnight and brush off in the morning and then into the smoker. A few times during the smoking I'll lightly brush on some maple syrup.

No actually "Beakly", we didnt come here to bother all the beaks out there, we came here too get more information on FISHING, you know? that thing you dont do cause your to busy starting shit with other people. I recently bought a smoker and the first two batches got ruined (first one due to the freezer burn, 2nd one was too salty)
