i know all the way up too sliceing the belly and pulling all the guts out and even the main blood vain across the back but when it comes to the gills there is a way to pull them out and all the rest of the crap comes out also but i have a really hard time trying to do this so hopefully someone will let me in on it thank you
Dyer Straits

Freak, cut up from the butt right to the small bone that joins the belly and the chin (looking at the fish belly side up). Cut that. This will give access to the gills. From there grab the gills and pull back down the fish. You can slice under the gills if they are a problem. If you manage to loosen the gills and pull down along the belly, all of the insides should come with. Better to see it than try and explain.
